The Crapybara is a large rodent similar in size to a medium sized dog. They are available in a variety of cuts and are seen as a better class of meat that the more common dog varieties. It is intended for a richer market that the corner it is produced on but The Black Fang Brotherhood have a number of unofficial outlets where rejected cuts and packaging failures instead of being destroyed find their way on the Meet Market (a term for under the counter sales, its a play on 'meat' and 'meet the demand').As an of shoot they also produce gas bottles from its sub-site The Runners.
Site
The Big Rat is the Big Meat Trust industrial farming and processing site. Great fields (not green and pleasent but piped cages stretch in underground layers beneath the site while on its surface are preparation and packaging sites. Under this runs the Slaughter Gardens where the animals are killed and butchered. Above this are the big pads that form the landing spot for the delivery airships. The people that can afford this kind of luxury tend to live up high. Below all is a supply railroad that takes produce out to distribution warehouses basinward.
A second change of factories stretch along Canary Row where canning complexes take the lesser cuts and off cuts for tinning. The biggest is Regal Rat Cannery but there are a number each specialising in a different produce (tinned meat, soup, ready-made's such as tinned sausage's etc). Support services such as printers for labelling and flyers, mechanical and clockwork services for the machinery etc are also located in this area.
Like a spiders web a whole plethora of pipes and conveyers link all these sites together. The most contentious of which come from the small power-house, The Runners. Across the Canal The Great Crap Works is a major fuel producer for the whole district but it is run by F&CC (Food and Chemical Concern), who are the largest dog farmers as well as fuel producers possible in the city. Mac Intooch, the founder of Big Meat realised early on that he could not afford to let F&CC control his energy needs, as it would allow his main competitor too much control. So he developed Runners, a subsidiary company that used methane from the crapybara and their exercise wheels to produce enough energy (supplemented with a little clockwork) to run his whole site and sell locally. The access is not high so this extra fuel is produced in the form of gas bottles that are sold at a store front to the actual Runners Building. There is a constant price war between the two companies and while Runners cannot really compete, it is an extra commodity so it makes it available at a discount for workers of the Big Rat facility and off sites.
